This Recipe for No-Bake Monster Cookies Is Sure to Cure Your Sweet Tooth

When you’ve got a limited time in the kitchen, no-bake desserts such as no-bake cookies are the way to go. While we love monster cookies, sometimes it’s just simply too hot out to turn on the oven. That’s where these no-bake monster cookies come in. All the yummy monster cookie flavors that you know and love—we’re talking peanut butter, chocolate chips, oats and M&Ms—but made in a fraction of the time (and in just one bowl!).

How to Make No-Bake Monster Cookie Balls

Ingredients

  • 2 cups oatmeal (old-fashioned oats or quick oats)
  • 1/4 teaspoon fine sea salt
  • 1/2 cup natural peanut butter
  • 1/4 cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons mini chocolate chips
  • 2 tablespoons mini M&Ms

Directions

Step 1: Make the oat flour

Add the oatmeal to the bowl of a food processor or blender and process until fine flour forms.

Step 2: Stir together the ingredients

Add all of the ingredients to a large bowl and use a spatula to stir together. If the dough seems a bit crumbly, add 1 to 2 tablespoons of water.

Step 3: Form the cookie balls

Use a 1-tablespoon scoop or two spoons to form 1-inch balls. Set the balls in a freezer-safe container.

Step 4: Freeze the balls

Freeze the balls for at least 30 minutes to allow them to set up. Eat them directly from the freezer or let thaw for 20 minutes.

No-Bake Monster Cookie Ball Variations

The options are endless when it comes to these cookie balls. Peanut-free house? Use almond butter or any other favorite nut butter instead. Peanut butter, butterscotch, or white chocolate chips would also be yummy additions to these cookies. Want to add a little extra protein oomph to the cookies? Stir in a scoop of your favorite protein powder. A drizzle or dip in melted chocolate would also be a decadent option.

How to Store No-Bake Monster Cookie Balls

These cookie balls can be stored in the freezer in a freezer-safe container for up to three months. Otherwise, they are best stored in the refrigerator and consumed within two weeks.
