  • 1/4 cup packed brown sugar
  • 1-1/2 teaspoons paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 boneless skinless chicken breast halves (6 ounces each)
  • 8 bacon strips

Directions

Step 1: Create spice rub

Preheat oven to 375°F. In a small bowl, mix together the brown sugar, paprika, onion powder, salt and pepper.

Step 2: Prepare chicken

Place chicken on a cutting board, plate or sheet pan. Sprinkle half of the spice rub on top of the chicken and rub over evenly.

Editor’s Tip: Before adding spice mix, take a paper towel and blot each chicken so it’s dry. This helps the spice rub not clump together with the excess moisture. That being said, do not wash your chicken.

Step 3: Wrap chicken with bacon

Wrap each chicken with two strips of good quality bacon, tucking bacon ends under chicken. Take your time so it’s wrapped evenly to avoid unevenly cooked meat. Roll each bacon-wrapped chicken in remaining spice mix, pressing mixture into the meat to adhere.

Step 4: Bake and serve!

Fit a wire rack over an aluminum foil-lined baking sheet. Place bacon-wrapped chicken on the rack and put in the oven. Bake until a thermometer inserted into the thickest part of the chicken reads 165°F and bacon is crisp, about 30-35 minutes.

Editor’s Tip: When you’re done cooking, save the leftover bacon grease to use as cooking oil (and extra flavoring!) for other recipes.
