Bacon-Wrapped Chicken Ingredients

  • Packed brown sugar
  • Paprika
  • Onion powder
  • Salt
  • Pepper
  • Boneless skinless chicken breast halves
  • Bacon strips

Directions

Step 1: Create spice rub

Preheat oven to 375°F. In a small bowl, mix the brown sugar, paprika, onion powder, salt and pepper.

Step 2: Prepare chicken

Place chicken on a cutting board, plate or sheet pan. Sprinkle half of the spice rub on top of the chicken and rub over evenly.

Editor’s Tip: Before adding spice mix, take a paper towel and blot each chicken so it’s dry. This helps the spice rub not clump together with the excess moisture.

Step 3: Wrap chicken with bacon

Wrap each chicken with two strips of good-quality bacon, tucking bacon ends under chicken. Take your time so it’s wrapped evenly to avoid unevenly cooked meat. Roll each bacon-wrapped chicken breast in remaining spice mix, pressing mixture into the meat to adhere.

Step 4: Bake

Fit a wire rack over an aluminum foil-lined baking sheet. Place bacon-wrapped chicken on the rack and put in the oven. Bake until a thermometer inserted into the thickest part of the chicken reads 165° and bacon is crisp, about 30 to 35 minutes.

How to Store Bacon-Wrapped Chicken

Once the bacon-wrapped chicken is fully cooked and has come to room temperature, you can store it in the fridge for up to four days.

To reheat the chicken, we recommend using the stovetop. Simply place a pan over medium heat and add just enough water or chicken broth to cover the bottom. Slice the bacon-wrapped chicken into strips and add to the pan when the liquid starts to simmer. Lower the heat and stir the chicken until it’s warmed through.

Can you use different cuts of chicken in this recipe?

Yes, you can use different cuts of chicken to make bacon-wrapped chicken! Try using thighs, wings, tenderloins or drumsticks.

Can you use different types of bacon?

Yes, you can technically use different cuts of bacon; but remember that thinner cuts of bacon should not be cooked as long as a chicken breast, and not all bacon can wrap around larger pieces of meat.

How can you tell when the chicken is done?

The chicken is done cooking when a thermometer inserted into the thickest part of the chicken reads 165°. Try not to cook the chicken too far past that as you run the risk of drying it out. Another way to test the chicken’s doneness is by cutting into the thickest part of the chicken and ensuring the color is no longer pink.

How do you serve bacon-wrapped chicken?

Bacon-wrapped chicken is an excellent entree, but it shouldn’t stand alone. Serve it over garlic and herb mashed potatoes and get some color on the plate with roasted green beans with lemon and walnuts. This cozy meal pairs well with a hearty glass of pinot noir or floral Lambrusco.
