Ingredients

  • 3/4 pound smoked sausage, cut into 1-inch pieces
  • 2 tablespoons butter
  • 2 cups refrigerated red potato wedges
  • 1 medium onion, cut into wedges
  • 1 medium apple, cut into wedges
  • 1/4 cup cider vinegar
  • 3 tablespoons sugar
  • 1/2 teaspoon caraway seeds
  • 2 tablespoons minced fresh parsley

Nutritional Facts

1-1/2 cup: 452 calories, 29g fat (13g saturated fat), 72mg cholesterol, 1268mg sodium, 33g carbohydrate (21g sugars, 4g fiber), 15g protein.

Directions

  1. In a large skillet, saute sausage in butter for 3-4 minutes or until lightly browned. Add the potatoes, onion and apple; saute 4-5 minutes longer or until apple is tender and potatoes are golden brown. Stir in the vinegar, sugar and caraway seeds.
  2. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until heated through. Sprinkle with parsley. Yield: 4 servings.

"This became a new Fall/Winter favorite some years ago. I typically use fresh potatoes though, and as such, have to cook those in the skillet first, then add the sausage and so on as directed. The one con I found with this dish is it doesn't taste as good the next day, so I only cook enough for one meal. As is, the recipe will feed two adults whopping portions or a family of four normal portions."

"I was surprised at how good this was! I used a full pound of smoked sausage & used fresh russet potatoes. Next time I will steam the potatoes before adding them to the skillet as it seemed to take forever for them to cook. Otherwise, this is a quick & easy recipe."

"This recipe was delicious! I left out the caraway seeds because I don't like them. Plus I made my own potatoe wedges using fresh potatoes. This is an easy recipe to make. I will definitely make it again."

"I must say I was really hesitant to make this but after it started cooking and smelling good I felt better. My 3 yr old ate it right up and my husband polished off the rest. If you like vinegar then this is really good. If your not a huge fan then cut back alittle on the sauce"

"Followed the recipe to a T, except used fresh boiled red potatoes. This was too sweet for our taste, and I didn't care for the caraway seeds. If I did make it again I wouldn't put any sugar or seeds, and I'd slice the apple into rings."

"I tried this recipe since it looked so easy and I was curious as to how the ingredients would taste together. It was absolutely delicious! very different flavor but very good. I used a Granny Smith apple like one of the commenters suggested, and I think that really added to the flavor. This recipe is a keeper and will definitely be made again."
