Pear Lime Gelatin Recipe

Packed with pears, this jolly gelatin salad is a light and refreshing treat. My Mom knew that fruit served in this fun form would get gobbled right up. She also liked it because the bowl looked like a sparkling jewel on our dinner table.

Ingredients

  • 1 can (29 ounces) pear halves in juice
  • 1 package (3 ounces) lime gelatin
  • 1 package (3 ounces) cream cheese, cubed
  • 1 cup whipped topping

Nutritional Facts

3/4 cup: 172 calories, 3g fat (2g saturated fat), 5mg cholesterol, 398mg sodium, 21g carbohydrate (0 sugars, 2g fiber), 8g protein. Diabetic Exchanges: 2 fruit, 1 fat.

Directions

  1. Drain pears, reserving juice; set pears and aside. Measure the juice; add water if needed to equal 1-1/2 cups. Pour into a saucepan; bring to a boil. Add gelatin; stir until dissolved. Gradually add cream cheese, whisking until smooth.
  2. Cover and refrigerate until cool. Mash reserved pears; fold into gelatin mixture. Fold in whipped topping. Pour into a 6-cup serving bowl. Refrigerate until set. Yield: 6 servings.

"Since childhood, I have always loved the combination of lime and pears. I love this recipe and have made it half a dozen times. Even a novice at cooking can make it! I wish they still sold cream cheese in 3oz. packages like they did years ago--I can only find the 8-oz. packages and have to cut them up, leaving the rest to go bad in the fridge!"

"Good! I followed the recipe exactly, except I pureed the pears instead of mashing them... I figured my family would've been less likely to eat them with the smooth & chunky texture, so I made it all smooth. They called it green mousse :-) It's not a recipe I would make often, pretty rich, but definitely one to keep on hand for the holidays! Mine turned out a tad runny, but I think it's because I didn't let it set up long enough... but supper was ready and I needed to get it on the table! Next time I make this, I'll give it more time in the fridge... still yummy though! If you want something to compare the flavor to, I thought it tasted very similar to key lime whipped yogurt!"

"I always double this because we like it so much. I boil 2 c. juice/water in microwave,then put it in the blender with the jello until dissolved (careful, it's hot). Then I add 8oz. cream cheese a piece at a time while blending. Then put in your pears, and pulse until they are coarse. Pour into a bowl with the last cup of water, and add the topping when it's partially set. It makes this so easy!"
