I got this recipe from a friend years ago and still make these cheesy sandwiches regularly. I serve them for dinner along with a steaming bowl of soup or fresh green salad. Any leftovers taste even better the next day for lunch. A helpful hint: Plain refrigerated biscuits seal together better than buttermilk types. Jan Schmid Hibbing Minnesota

I have been making this recipe for years. It is requested every time my daughter returns from college. We top them with all the good taco stuff...more cheese, lettuce, salsa, sour cream & black olives. ONE is a meal. Leftovers are awesome.

I love this recipe, however, I have tweaked it a bit to make it into a casserole. I line a pie plate or a larger dish if making it for more people, with the biscuits, add the taco meat, lots of cheese and then lay the remaining biscuits over the top and bake it. When it's done, just slice in individual servings like a lasagna. Everyone loves this recipe, and it's so easy to make. The casserole actually serves more people and takes less time to do. I've been making it this way for over 13 years now and it's always a crowd pleaser, even for the pickiest of eaters!!!

These are delicious and simple! Next time I'm thinking about adding some jalapenos for a little extra kick and maybe serving it with salsa and sour cream. Yum!!!

Great dish. We use cubed Mexican velvetta instead of shredded cheese... delicious!! Works well to freeze before baking also.
