I'm a home health nurse and got this recipe from one of my elderly clients, who had used it for years. Now, it's one of my family's favorites. It will never curdle, thanks to the secret ingredient of powdered nondairy creamer. You can serve this homey favorite for just 85¢ per serving. —Kathleen Johnson, Lake City, South Dakota

Scalloped Potatoes 'n' Ham Casserole Recipe
  • Prep: 25 min. Bake: 1 hour

Ingredients

  • 3/4 cup powdered nondairy creamer
  • 1-3/4 cups water
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 tablespoons dried minced onion
  • 1 teaspoon salt
  • 3/4 teaspoon paprika
  • 6 large potatoes, peeled and thinly sliced
  • 2 cups diced fully cooked ham
  • 1 cup (4 ounces) shredded cheddar cheese

Directions

  • In a small bowl, combine creamer and water until smooth. In a small saucepan, melt butter. Stir in the flour, onion, salt and paprika until smooth; gradually add creamer mixture. Bring to a boil; cook and stir for 1-2 minutes or until thickened.
  • In a greased shallow 2-1/2-qt. baking dish, combine potatoes and ham. Pour sauce over the top.
  • Cover and bake at 350° for 15 minutes. Uncover; bake 40-50 minutes longer or until potatoes are tender. Sprinkle with cheese; bake for 5-10 minutes or until edges are bubbly and cheese is melted. Yield: 6 servings.

Nutritional Facts 1-1/4 cups equals 563 calories, 18 g fat (12 g saturated fat), 60 mg cholesterol, 1,166 mg sodium, 78 g carbohydrate, 6 g fiber, 21 g protein.

Really tasty! We loved the taste of the creamer sauce. Used some leftover ham, but now I want to make again and use sausage as another poster suggested. Very good!!!!

My husband LOVED this recipe the first time. I'm making it again tonight...he can't wait:) It was soooo delicious! I subbed the ham for sausage....and it was amazing:) Thank you sooo much for this recipe.

This recipe was way too watery and bland for my families taste. I have made other recipes that curdled so I was excited to try this but was dissapointed at the result.

This is a great recipe. I used a bag of Simply Potatoes sliced to make it even easier. I also cut the dried minced onion amount in half. Perfect!

This was so delicious! I made this as our main course dinner last night....I used raw yellow onion, I doubled the amount of Ham and then built my casserole in layers to ensure even distribution of the ham chunks and then I used 1.5 the amount of sauce called for and it turned out PERFECT! If you are using left over bone-in ham to make this I would caution against using any extra salt though because the ham is already SO salty you probably will find that it is seasoned enough without adding the extra tsp called for - Personal opinion only though! Thanks for Sharing this recipe!

This recipt is good. Potatoes took longer to cook. Maybe pre-cook them next time.

I will make this recipe again because my picky son really enjoyed it. But, my husband thought it was slightly bland. I am thinking I will add some real onion or maybe some red pepper flakes for a bit more flavor. Maybe garlic.
