These are my favorite muffins to serve with a cup of coffee or a tall glass of cold milk. Not only are they great for breakfast, they make a tasty dessert or midnight snack. Cappuccino Muffins Recipe

Ingredients

  • ESPRESSO SPREAD:
  • 4 ounces cream cheese, cubed
  • 1 tablespoon sugar
  • 1/2 teaspoon instant coffee granules
  • 1/2 teaspoon vanilla extract
  • 1/4 cup miniature semisweet chocolate chips
  • MUFFINS:
  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 2-1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup 2% milk
  • 2 tablespoons instant coffee granules
  • 1/2 cup butter, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3/4 cup miniature semisweet chocolate chips

Directions

  • In a food processor, combine the spread ingredients; cover and process until well blended. Transfer to a small bowl; cover and refrigerate until serving.
  • In a large bowl, combine the flour, sugar, baking powder, cinnamon and salt. In another bowl, combine milk and coffee granules until coffee is dissolved. Add the butter, egg and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips.
  • Fill greased or paper-lined muffin cups two-thirds full. Bake at 375° for 17-20 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm with espresso spread. Yield: about 14 muffins (3/4 cup spread).

Nutritional Facts 1 muffin with 1 tablespoon spread equals 273 calories, 14 g fat (9 g saturated fat), 44 mg cholesterol, 261 mg sodium, 34 g carbohydrate, 1 g fiber, 4 g protein.

Big Batch Baked Goods

We enjoy homemade baked goods for breakfast, but I don’t have time to bake each morning before school. So I devote 1 day a month to making large batches of cinnamon rolls, doughnuts, cream cheese rolls and muffins. I place them in heavy-duty resealable plastic bags labeled with the date. (They freeze for about 2 months.) On busy mornings, it’s a snap to pop a few in the microwave to warm. The kids love the fresh-baked flavor. —Lori T., New London, Texas

PERFECT!!! it tastes so good even w/o the spread. it has a strong coffee flavor wc i like and easy to make.

This is one of my favorites! I do cut the butter to 6 T. and the sugar to 2/3 c. in the muffin portion. You will not be disappointed in these! Delic!

I have yet to try this. What can i substitute for 2% milk, can i use whole milk instead?

We really enjoyed these muffins. Coffee and chocolate are such a great combo!! Didn't make the spread, we liked the muffins as is.

I followed the recipe except I used 1T. of baking powder because I had a similar recipe that I liked for blueberry muffins that called for 1T. These were really very good. There seemed to be a lot of butter that came through the paper baking cups on the bottom. I am wondering if we couldn't use a little less butter in the recipe. I tried this recipe so I could bring the muffins as a hostess gift this evening. I will certainly be proud to offer these up.
