Tip

Substitute for Nuts

If your family loves the crunch of nuts in brownies and chocolate chip cookies, but someone is allergic to them, add granola or crisp rice cereal in the same amounts as the nuts called for in your recipes. But, always check the granola or cereal packages for nut allergy alerts to be certain.

Actually I'd made these delicious treats before-last year for Passover! I used the same amout of matzo meal & 1/4 to 1/2 cup potato starch plus the same amt. of salt used in the recipe. I used 9 Tbsp. unsweetened cocoa + 5 Tbsp. canola oil to = 3 squares unsweetened chocolate, melted. Today when I made these Brownie Mounds, I placed a Hershey Chocolate kiss

in the middle of each cookie or a miniature Snicker Bar or Milky Way Bar! This added touch makes these cookies very festive! Dawn E. Lowenstein

These were okay, but I've definitely tasted better low-fat cookies. The kids didn't like them because they weren't sweet enough. Very simple to make, though, and I had all the ingredients on-hand... no last-minute trips to the store.
