This simple six-ingredient recipe sent in by Roberta freedman is so tasty, you won't believe it's also good for you. From her home in mesilla Park, New Mexico, Roberta writes, "I like it because it is so quick to fix. It's just one way I add some flavors of the Southwest to lean chicken."

Has been one of our favorites for years now. Am teaching my college student son how to make it for himself, he likes it that much. The leftovers (if there are any) are great with some cheese for a meaty quesadilla, or as part of a salad.

I really enjoyed this recipe. I put it on a bed of mixed greens and raspberry vineagrette. It does not sound good but it is. Thanks

It was very quick and simple!! After adding the lime juice, I added a jar of our homeade salsa to simmer in. Added a nice extra zing to it.

Delicious! its quick and easy to make, and there are very few ingredients, so if you have the spices on hand, all you really need to buy at the store are limes and chicken :) Will definitely make this again!
