Pickling is a fantastic way to enjoy ramps beyond their short harvest season. Serve pickled ramps with charcuterie boards, on grilled sandwiches or mixed into salads. —Taste of Home Test Kitchen, Milwaukee, Wisconsin

Pickled Ramps

Pickled Ramps Tips
Where can you buy ramps?
If you're interested in trying recipes with ramps, the hardest part is usually finding them. Similar to garlic scapes, ramps are typically foraged in eastern North America during their very short growing season in early spring. Your best bet is to ask around at farmers markets and let vendors know that you are interested in buying them when they become available.
How do you eat and serve pickled ramps?
Showcase your pickled ramps when building a charcuterie board. They can also be eaten by themselves, or used as toppers for crostini spread with soft cheeses. They'll also make a great garnish to perk up lettuce salads or hearty sandwich recipes. When you're making the pickled ramps, be sure to save the greens for recipes like ramp pesto or ramp butter.
How long will pickled ramps last?
Store pickled ramps in an airtight container in the refrigerator for up to 1 month.
