These easy jackfruit tacos are flavored with taco seasoning and topped with fresh green apple salsa. Make them vegan by omitting the dairy sour cream sauce or substituting vegan sour cream mixed with plant-based milk. —Henrie Marie, Marlboro, New York

Ingredients

  • 3 tablespoons olive oil, divided
  • 1 can (20 ounces) jackfruit, rinsed, drained and chopped
  • 1 envelope reduced-sodium taco seasoning
  • GREEN APPLE SALSA:
  • 1/2 medium ripe avocado, peeled and cubed
  • 1/2 cup chopped baby cucumber
  • 1/2 cup chopped green apple
  • 1/4 cup chopped green pepper
  • 2 tablespoons thinly sliced green onions
  • 1/2 jalapeno pepper, seeded and minced
  • 4 teaspoons lime juice
  • 1 tablespoon chopped fresh cilantro
  • 1/4 teaspoon sea salt
  • SOUR CREAM SAUCE:
  • 1/4 cup sour cream
  • 2 tablespoons 2% milk
  • 6 flour tortillas (6 inches), warmed

Directions

  1. In a large skillet, heat 2 tablespoons oil over medium-high heat. Add jackfruit; cook and stir until caramelized, 8-10 minutes. Stir in taco seasoning and remaining 1 tablespoon oil; mix well. Remove from the heat; keep warm.
  2. In a small bowl, mix all green salsa ingredients. For sour cream sauce, whisk together sour cream and milk until smooth. Serve jackfruit in tortillas with salsa, sour cream sauce and, if desired, lime wedges.
