Healthy Baked Oatmeal

- 3 cups quick-cooking oats
- 1 cup packed brown sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup milk
- 1/2 cup butter, melted
- 2 eggs, lightly beaten
- Additional milk
- In a large bowl, combine the first eight ingredients. Spoon into a greased 9-in. square baking pan. Bake, uncovered, at 350° for 40-45 minutes. Serve warm with milk.

One star is being generous ... this is based solely on this recipe being called “Healthy”. A cup of brown sugar and a stick of butter for 8 servings? Those proportions are found in brownies, not a healthy breakfast recipe.

I made this recipe and ate it two different ways. We had it for dessert with a berry sauce over top of it. I also enjoyed it for breakfast in a bowl with some milk added. Both ways were good! It tastes like oatmeal cookies. I used only 1/2 cup brown sugar and it was still sweet enough for me.
