Kids' Favorite Blueberry Muffins Recipe

Ingredients

  • 2-1/2 cups pancake mix
  • 1/2 cup sugar
  • 1 egg
  • 2/3 cup water
  • 1/4 cup canola oil
  • 1-1/2 cups fresh or frozen blueberries

Directions

  • In a large bowl, combine pancake mix and sugar. In another bowl, whisk the egg, water and oil. Stir into dry ingredients just until moistened. Fold in blueberries.
  • Fill paper-lined muffin cups two-thirds full. Bake at 400° for 14-16 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Yield: 1 dozen.

Editor's Note: If using frozen blueberries, use without thawing to avoid discoloring the batter.

These were delicious! These almost taste like the ones from the box that we like so much. These are not a heavy muffin but sweet and light. I did only use 1 cup of blueberries.

Easy and tasty! The batter is thick, so I placed the blueberries in by hand so as not to break them up. More cakelike then most blueberry muffin recipes.

this is one of the best blueberry recipes i have ever made and i have made many. this is a staple recipe in my home so easy and they are delicious

I seldom do semi-homemade, but this recipe is a definite keeper! I love it! I think you can make this in any version. I have made blueberry (I also needed a little more water about 3/4C), cranberry orange, and banana nut. The basic recipe is the same, just adjust the sugar and liquid as needed. This recipe takes me about 20 minutes from start to finish. It is certainly something the kids can help with and fast enough to whip up a batch for unexpected company. These muffins are slightly cakier than my standard recipe old-fashioned blueberry muffins.

these were super easy to make but the batter was too thick. it needed just a little more water, they came out more crunchy than soft. I will try them again with more water next time or maybe a little sour cream
