Peanut Butter Popcorn Bars Recipe

  • Yield: 24 Servings

Ingredients

  • 10 cups popped popcorn
  • 1/2 cup sugar
  • 1/2 cup light corn syrup
  • 1/2 cup creamy peanut butter
  • 1/2 teaspoon vanilla extract

Directions

  • Place popcorn in a large bowl; set aside. In a saucepan over medium heat, bring sugar and corn syrup to a boil, stirring constantly. Boil for 1 minute. Remove from the heat.
  • Stir in peanut butter and vanilla; mix well. Pour over popcorn and mix until well coated. Press into a buttered 13-in. x 9-in. pan. Cool slightly before cutting. Yield: 2 dozen.

Nutritional Facts 1 serving (1 slice) equals 90 calories, 4 g fat (1 g saturated fat), 0 cholesterol, 74 mg sodium, 13 g carbohydrate, 1 g fiber, 2 g protein.

We just didn't go for these. The flavor was okay. It's just that they were very chewy, when you expect a popcorn bar to be more ... snappy I guess.
