- 4 eggs
- 2 cups sugar
- 1 cup butter, melted
- 2 cups all-purpose flour
- 2-1/2 teaspoons almond extract
- Confectioners' sugar
- In a large bowl, beat the eggs and sugar until lemon-colored. Beat in butter and extract; gradually stir in the four and mix well. Spread into a greased 13x9-in. baking pan.
- Bake at 325° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Sprinkle with confectioners' sugar.

These are a family favorite. I made them once years ago when I was looking for something quick to whip up. Everyone loved them and I've made them ever since.. They're fast, super easy and delicious. I make pans and pans of them for parties and other occasions every Christmas. To dress them up, I sprinkle them with the confectioners' sugar, then add red decorator sugar and some slivered or sliced almonds.

I love the cake like texture of these bars. Have made twice exactly to recipe and knew was keeper. I did cut 1/8 cup sugar from recipe and like even better. I plate the center and keep the crisp edges for myself.I've also froze them, they are fast to defrost on the counter. And quite delicious even eaten straight from the freezer. Very happy with this recipe.

I made these exactly as directed last week to take to work. They were great! Today, I made the same recipe but substituted lemon extract and added a 1/2 teaspoon of dried grated lemon peel instead of almond. These are great, too, but would add perhaps a full teaspoon of lemon peel or fresh lemon zest (even better) to give it a little more lemon flavor. I will keep this recipe handy! They are so easy to make!

I increase the recipe by another 4th and bake in a 10x15 pan. Then I cut the puffier edges off and slice the middle part into bars. The "scraps" are my at home treat! EVERYBODY loves these - crispy top, gooey inside, simple and delicious.

Followed the recipe exactly, but they came out very dry and cakey with a crusty top which crumbled when I cut through it. The taste was fine, just need WAY to be way more moist for my taste. I will not be using this recipe again.
