Cashew Brittle Recipe

Ingredients

  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1 to 1-1/2 cups salted cashew halves
  • 1 teaspoon butter
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract

Directions

  • In a microwave-safe bowl, combine the sugar and corn syrup. Microwave, uncovered, on high for 3 minutes; stir. Heat 2 minutes longer. Stir in cashews and butter. Microwave on high for 20-50 seconds or until mixture turns a light amber (mixture will be very hot).
  • Quickly stir in baking soda and vanilla until light and foamy. Immediately pour onto a greased baking sheet and spread with a metal spatula. Chill for 20 minutes or until set; break into small pieces. Store in an airtight container. Yield: 3/4 pound.

Editor's Note: This recipe was tested in a 1,100-watt microwave.

Very easy to make and a huge hit with the family! Work fast! It hardens very quickly!

I followed these directions exactly and found the result to be a sticky candy that never did completely harden. The solution is to extend the initial cooking time from 3 minutes to 4 minutes; add the cashews and cook for 3 minutes rather than 2 minutes; add the butter and vanilla; heat for another 1 1/2 minutes; then add the baking soda, stirring until very light and frothy. Spread evenly on a buttered cookie sheet and you'll have a true brittle.

followed recipe and realized there was no water. Anyone know how much would be needed? I would like to make it and have it turn out correctly. Thanks for input.

Very very tasty treat!!! Easy to make too, especially after watching the video. I will be making this time and time again, especially since it disappears in my house so quickly!

I made this today and it was very easy and tastes great. Only thing, as mentioned before, you do need to have all the ingredients measured and layed out ready to use because this recipe moves much faster than the stovetop method. Mine turned out perfect. I have a 1000 Watt microwave so I extended the final cooking step to about 2 min. or so, watching it carefully that it did not burn.

My only complaint is: it doesn't make very much especially if you want to give it for stocking stuffers. This would be good with almonds or peanuts as well. Or maybe even mixed nuts..hummm..have to try that one!!

This recipe is so simple and so delicious. My husband and I fought over it. By Christmas we had eaten it all. I wanted more and only had peanuts. It was just as good. Thanks for sharing this recipe.

Very good and easy recip. I made two individual batches and will try to to make a double batch next time. You do have to work fast as it sets up quickly

I stay away from any recipe requiring a candy thermometer, so this recipe was a real find. Of course, as easy as it is I still messed up on one step. I would make it again. For candy-impaired cooks like me I'd definitly suggest watching the video first!

This brittle is easy to make and tastes delicious. My family loves it and I tend to hide it as much as I can, because if they find it, it vanishes.

My 13 year old daughter found a cashew brittle recipe in this magazine and can not find it agin. She threw away the original on accident and has tried this website to find the one she did before (which all of her grandparents want for christmas). The recipe on the webiste calls for 2 1/2 c cashews and no way is that what it should be. Sorry this really isn't the recipe she used but it is stiil what the grandparents want
