Gingerbread Yule Log

This is delicious. the cake is light and moist and the spiced whipped cream is perfection. The only changes I made to the recipe were to dissolve an envelope of unflavored gelatin in 1/4 c water and add it to the whipped cream to stabilize it. I also melted white chocolate then spread it thinly on parchment paper. i broke it into long pieces and decorated the Yule log with the chocolate to resemble bark. it was beautiful.
Always a hit. So easy too.
