Edna's Ho Ho Cake Recipe

Ingredients

  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 2/3 cup sugar, divided
  • 2/3 cup shortening
  • 1/3 cup butter, softened
  • 3/4 teaspoon vanilla extract
  • Pinch salt
  • 2 prepared 9-inch round chocolate cakes
  • GLAZE:
  • 1/4 cup butter, cubed
  • 1/4 cup baking cocoa
  • 3/4 cup confectioners' sugar
  • 2 to 4 tablespoons milk

Directions

  • For filling, in a small saucepan, combine flour and milk until smooth; stir in 1/3 cup sugar. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened.
  • Transfer to a large bowl; cool. Beat in the shortening, butter, vanilla, salt and remaining sugar until smooth. Spread between cake layers.
  • For glaze, melt butter and cocoa in a small saucepan. Whisk in confectioners' sugar and enough milk to achieve a drizzling consistency. Drizzle over top of cake, allowing some to drape down the sides. Yield: 12-16 servings.

We made this for my sons 2nd birthday party. It was fantastic! I received all sorts of great compliments.

I am not saying to change the granulated sugar called for in the filling to confectioner's sugar. Take Try2cook4fun's advice and chill the filling while baking your cake. Then, after adding the remaining ingredients, beat for a good 5 minutes to make a light, fluffy filling in which the sugar is completely dissolved. I would change my rating of this recipe to 5-stars if it would let me.

In defense of Lenetoo, there is NO confectioner's sugar listed in the filling ingredients, sillygirl. It calls for 'sugar', which normally means granulated sugar in a recipe. Confectioner's sugar would make it thicker.

The reviewer LENETOO must have made this the wrong way or something because I made it (using my own choc. cake) and it kicked butt. Everyone LOVED it! You have to make sure you cool the filling before you add the confec. sugar that may be why it was too loose. Next time I will double the glaze too. Soooo good!!!!!

Delicious! My son's criticism was there wasn't enough of it! I doubled the filling as I cut the the cakes in half for four layers (looks more like a ho ho than a whoopie pie). Tip: Make the first step of the filling first and put in fridge to cool. Then make your cake and by the time the cake is baked and cooled. The filling will be cool enough to do the second step. Its worth the effort because it takes soooo good!

THIS IS BY FAR, THE WORST CAKE I HAVE EVER MADE...THE ONLY GOOD THING WAS THE PACKAGED CAKE...THE FILLING WAS TOO LOOSE AND HAD THE TASTE I WOULD LIKEN TO WALLPAPER PASTE, AND THE GLAZE HAS NO TASTE....I USED THE WHOOPIE FILLING RECIPE AND MY OWN GLAZE.... JUST TERRIBLE...I DONT KNOW IF THERE ARE INGREDIENTS MISSING OR DIRECTIONS WRONG, BUT I WOULD NOT RECOMMEND THIS CAKE TO ANYONE...
