I grew up in the Midwest where most meals center around meat. As a kid, some of my favorite home-cooked family dinners included chicken Parmesan, steak with loaded baked potatoes and a ham, potato and asparagus skillet. Until recently, I thought meat should be at the center of every plate. But it turns out meat is so ingrained in my diet that I didn’t bother looking into plant-based protein.

How We Tested Mosaic Plant-Based Meal Delivery

Intrigued by Mosaic’s frozen food meal delivery angle, I ordered meals with ingredients that are notoriously hard to freeze. In my own experience, Brussels sprouts, cauliflower, green beans and leafy greens do not hold up well. So, if Mosaic could convince me that frozen, veggie-packed meals aren’t always a soggy disaster, I knew I’d have a new meal prep service to add to my mix.

My box arrived at my door on time and frozen. Meals come packed with dry ice and freezer packs to keep everything fresh. I wasn’t prepared for how cold the meals were straight out of the box. Pro tip: Wear oven mitts or grab a towel when putting these meals in the freezer!

The First Test: Single-Serve Meals

Mosaic offers a variety of heat-and-eat meals that are ideal for lunches or quick dinners. For my first test, I tried a variety of their single-serve meal options.

Spinach Artichoke Pizza

My first Mosaic box included a tempting spinach artichoke pizza. The size isn’t shareable, unless you’re feeling generous. But, that’s the beauty of it. It’s a personal pan pizza! I fired up the oven and the ‘za was ready to eat within 25 minutes. Filled with fontina and smoky gouda cheeses, spinach, artichokes and garlic on top of the crispy cauliflower crust, it tasted exactly like creamy spinach artichoke dip. I was impressed that the cauliflower crust had a thick crisp to it, too. And it was topped with pickled pepperoncinis. (I also added a few of my own pepperoncinis for extra tang.) The spinach artichoke pizza was a win in my books. It was creamy, crispy and pure comfort food.

Mac and Greens Bowl

I carried on the week with the mac and greens bowl. This was the cherry on top of a long day. Despite burning my finger taking it out of the microwave (wear oven mitts!), the broccolini and Brussels sprouts were the perfect complement to the creamy mac. Better yet, it didn’t even taste like I was eating a serving of veggies. The greens were delicately woven into the creamy mac and weren’t soggy. Success!

Tangy Thai Stir-Fry

Is your mouth watering yet? Filled with bean sprouts, carrots, red cabbage and of course, rice noodles, the tangy Thai stir-fry delivers on restaurant-quality flavors. The bowl is topped with a zesty tamarind sauce, baked tofu and crushed peanuts. It made a savory quick lunch that I felt good about eating afterward. For me, tofu is an intimidating ingredient. This meal taught me that tofu can be flavorful, it just takes the right sauces and toppings to round it out. You can catch me stocking up on this tangy dish for the next time I have a hankering for pad Thai.

Harissa Jackfruit Bowl

Another intimidating ingredient for me, jackfruit is something I never would have thought to cook with. Plated on a bed of quinoa, chickpeas, tomatoes and spinach and topped with a harissa tahini sauce and almonds, the jackfruit bowl didn’t disappoint. After heating it up in the microwave for a quick lunch, I thoroughly mixed it all together. I loved that every bite was packed with all the savory ingredients so I wasn’t getting a fork full of just quinoa or just jackfruit. And it had nearly 20 grams of protein! Though I don’t love tomatoes, I didn’t even notice them.

The Second Test: Family-Style Meals

If you’re cooking for a crowd, Mosaic stocks plenty of family-style meals as well. These dinners pack in the veggies while still featuring familiar flavors.

Corn, Greens and Tomato Grits Casserole

For the family meals, I started with the corn, greens and tomato grits casserole. Though Mosaic’s family meals take upwards of an hour and 30 minutes to bake, the beauty lies in the time I save not having to cook (or wash a mound of dishes). I just pop it in the oven, set a timer and carry on with my evening. The star veggies in this casserole are the tomatoes and spinach. Full transparency, I wasn’t a huge fan of this casserole, but I contribute most of it to the fact that I’m not big on tomatoes. And the grits were a tad bland (which is normal because they’re, well, grits). I added my own hot sauce to spice it up.

Buffalo Cauliflower Pasta Bake

Buffalo cauliflower meets pasta in this Buffalo cauliflower pasta bake. I popped it in the oven for dinner with my sister and boyfriend, because, well, there was no way I was eating this family meal alone. Unsure of how the cauliflower would heat up, I was shocked at how fresh every ingredient tasted. The penne pasta and cauliflower captured the perfect balance of soft but not soggy, while the mild Buffalo sauce brought it all together. Did I mention the ranch-seasoned bread crumbs? It had those, too. The family meal was packed with flavor and all three of us finished the meal off in one sitting—it was that good.

Faux Sausage Pumpkin Lasagna

You can never go wrong with a warm plate of lasagna. The faux sausage pumpkin lasagna is layered with pumpkin bechamel, kale, carrots, ricotta, faux Italian sausage crumbles and lasagna noodles. It’s another (almost) ready-to-eat family meal that goes from the freezer, to the oven and your belly in a little over one hour. In need of an easy lunch idea, I turned to the pumpkin lasagna. To me, it tasted like there were more kale and carrots to faux sausage, which I appreciated. Oh, and I can’t forget the ricotta-sage filling. It was *chef’s kiss.* This ratio was ideal for obtaining a proper dose of veggies with my lasagna. It ended up holding me over for a few days worth of lunches, and it kept my heart and belly happy all day long.

The Third Test: Smoothies and Snacks

Yep, Mosaic makes snack time healthy and satisfying with smoothies. The smoothie ingredients come frozen in a cup. All that’s required is blending it with your nondairy milk of choice. I tried the raspberry cacao smoothie and cacao cold brew smoothie. Not only were the smoothie delectably rich and thick, the taste was unreal. I’ve experimented with veggie-filled fruit smoothies, but my DIY versions never quite get the ratio of fruit to greens right. Mosaic nails it. With nine grams of protein and a hint of veggies, these smoothies are well-balanced. I was so impressed I would lean on Mosaic as a smoothie delivery service alone. (And don’t forget about the best fruit delivery services!)

Oat Bowls

The peanut butter, banana, & cacao oat bowl was exactly what I expected. I topped it with fresh banana for an easy breakfast. Surprisingly, it kept me full for hours. Because oats are easy to whip up, I won’t be relying on Mosaic for my breakfast needs, but it’s certainly a fun add-on.
