Chewy Almond Cookies Recipe
  • Prep: 15 min. + chilling Bake: 10 min.

Ingredients

  • 3 tablespoons butter
  • 1 cup packed brown sugar
  • 1 egg
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1-1/2 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup sliced almonds

Directions

  • In a large bowl, beat butter and brown sugar until crumbly. Beat in egg and vanilla. Combine the flour, baking soda and cinnamon; gradually add to the butter mixture and mix well. Shape into two 6-in. rolls; wrap each in plastic wrap. Refrigerate overnight.
  • Unwrap; cut into 1/4-in. slices. Place 2 in. apart on greased baking sheets. Sprinkle with almonds.
  • Bake at 350° for 7-10 minutes or until lightly browned. Cool for 2-3 minutes before removing to wire racks. Yield: 4-1/2 dozen.

Nutritional Facts 1 serving (2 each) equals 80 calories, 2 g fat (1 g saturated fat), 11 mg cholesterol, 30 mg sodium, 14 g carbohydrate, trace fiber, 1 g protein.
