I love these any-occasion air-fryer taquitos. Spice them up by adding sliced jalapenos if desired. —Mark Webber, Valdez, Alaska

Ingredients

  • 2 large eggs
  • 1/2 cup dry bread crumbs
  • 3 tablespoons taco seasoning
  • 1 pound lean ground beef (90% lean)
  • 10 corn tortillas (6 inches), warmed
  • Cooking spray
  • Optional: Salsa and guacamole

Directions

  1. Preheat air fryer to 350°. In a large bowl, combine eggs, bread crumbs and taco seasoning. Add beef; mix lightly but thoroughly.
  2. Spoon 1/4 cup beef mixture down the center of each tortilla. Roll up tightly and secure with toothpicks. In batches, arrange taquitos in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook 6 minutes; turn and cook until meat is cooked through and taquitos are golden brown and crispy, 6-7 minutes longer. Discard toothpicks before serving. If desired, serve with salsa and guacamole.

How do you keep corn tortillas from cracking when making taquitos?

Fresh corn tortillas should keep from cracking if you warm them in the microwave. Stack 10 tortillas together and wrap in damp paper towels before microwaving for 30 seconds to 1 minute. (You can also make sure they're super fresh by making corn tortillas at home.)

How long do taquitos last in the freezer?

You can freeze taquitos for up to 3 months. Cool them completely before freezing taquitos on a waxed paper-lined baking sheet. Transfer to a zip-top freezer bag. Reheat taquitos in a single layer on a greased air-fryer tray at 350° for 10-12 minutes on each side.
