They’re not glamorous, but the crispy roasted cabbage slices are a delicious and affordable side dish or an easy vegetarian entree. When you just can’t stand the thought of another boring salad, cabbage comes to the rescue! The steaks are a simple and satisfying way to add a vegetable to any meal, and they require almost no hands-on effort.

What Are Cabbage Steaks?

This easy dish is exactly what it sounds like: thick slices of cabbage that are brushed with olive oil, seasoned, and then roasted in the oven. The steaks are similar to roasted Brussels sprouts, but instead of trimming many individual little sprouts, you can just slice a single head of cabbage.

Roasting vegetables brings out their natural sweetness, and this cabbage steak recipe is no exception. Roasted cabbage has a mild, sweet and buttery flavor, as well as a tender, melt-in-your-mouth texture. The edges get nice and crispy and caramelized in the oven. This is a far cry from the raw, tough, shredded cabbage that you’ll find in coleslaw.

  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley flakes
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon onion powder
  • Freshly ground black pepper, to taste

Directions

Step 1: Preheat oven

Preheat the oven to 400°F. Line a rimmed baking sheet with foil and brush or spray with olive oil. Set aside.

Step 2: Slice cabbage

Remove the outer leaves from the cabbage. Rinse the cabbage and pat dry. Cut off the bottom of the stem and use a sharp knife to slice the cabbage into 1-inch thick rounds. You should have about 4 to 6 rounds, depending on the size of your cabbage.

Step 3: Drizzle with olive oil

Arrange the cabbage rounds in a single layer on the prepared baking sheet. Drizzle a generous amount of olive oil onto each piece of cabbage and rub it around with your fingers (or brush it onto each piece).

Step 4: Season

In a small bowl, stir together the kosher salt, garlic powder, parsley flakes, dried basil and onion powder. Sprinkle the seasoning blend onto the cabbage rounds, to taste (you might not need all of the seasoning). Add freshly ground black pepper on top, if desired.

Cabbage Steak Tips

How to Serve Cabbage Steaks

Cabbage steaks work well as a vegetarian entree with a side of fried apples or applesauce, baked potatoes or soft dinner rolls. Serve each cabbage steak as a whole, or cut individual wedges in half to serve smaller portions. Use a spatula to keep the slices intact as you carefully lift them off of the baking sheet.

As a side, a roasted cabbage steak can hold its own with hearty meals like grilled pork chops, meatloaf or roasted chicken.

Cabbage Steak Variations

Any of your favorite herbs and seasonings will work for this cabbage steak recipe. I love this particular savory blend of salt and herbs, but you can keep it simple with just salt and pepper. Or try garlic salt and pepper, chopped fresh parsley or rosemary, or even a touch of thyme.

For darker, crispier cabbage (which is very flavorful!), leave the cabbage steaks in the oven for up to 1 hour.

How to Store Cabbage Steaks

The roasted cabbage can be prepared in advance and served at room temperature, or reheated. The steaks will stay fresh in an airtight container in the refrigerator for 4 to 5 days. To reheat 1 or 2 steaks, place the cabbage in a skillet over medium-low heat and warm for a few minutes on each side. To reheat larger portions, place the cabbage on a baking sheet and warm in a 350° oven until heated through (about 10 to 15 minutes). You can also reheat the cabbage in the microwave, but it will lose the crispy edges.

If you love cabbage as much as we do, you might also like to prepare it on the grill, fry it in a skillet with apples and onion, braise it, or enjoy it in any of these other delicious cabbage recipes! Plus, this vegan steak may offer another delicious option.
