This Pimento Cheese Sandwich Is the Easiest (and Tastiest!) Brunch Dish Ever

Who doesn’t love a good cheese sandwich? Creamy, gooey cheese between thick, fluffy slices of bread is one of the most delicious, and easy, comfort foods around. But this childhood classic isn’t just reserved for a school lunch box. Whip up a few of these pimento cheese sandwiches for your next brunch, afternoon tea or book club meeting, so you can spend more time with friends and family, and less stuck in the kitchen. Here’s how these simple sandwiches come together:

Perfect Pimento Cheese Sandwiches


1 package (8 ounces) cream cheese, softened

2 jars (4 ounces each) diced pimentos, drained

¼ cup mayonnaise

2 tablespoons finely chopped onion

1 pound sharp cheddar cheese, shredded (about 4 cups)

2 slices of fresh white bread per serving, as needed


Step 1: Mix It Up

Add the cream cheese, pimentos, mayo, onion and shredded cheese to a large mixing bowl, and mix together until fully combined. Cover the mixture with plastic wrap and toss in the fridge for the flavors to blend, about 2 hours.

Step 2: Spread It

After removing the cheese mixture from the fridge, take 2 slices of bread and smear a healthy amount of cheese on one slice, about 2 tablespoons or so. Top with the second slice of bread and serve whole, or cut into fourths for finger sandwiches.

And that’s it! This recipe will yield about 4 cups of pimento cheese, which means there will be enough sandwiches for your whole crowd (plus plenty leftover to spread on crackers, chips or veggies!).
