How to Make Breakfast Ramen Bowls

Move over avocado toast: This breakfast ramen will be your new morning meal.

Look, it’s no secret that we love breakfast foods. We collected all our best breakfast recipes of the year, which was powered by casseroles, breakfast breads and mini egg bakes. So when people started transforming humble ramen noodles into a hearty breakfast, we knew we had to learn more.

What Is Breakfast Ramen?

Ramen has always been a quick and easy lunch and dinner option, whether you’re having spicy and brothy ramen, creamy ramen or a different ramen recipe altogether. But this breakfast ramen might be my favorite application yet.

The best thing about ramen is that it can be customized in endless ways. In addition to the noodles, you can add sauteed or fresh veggies, different kinds of meats and pickles and, of course, an egg. I like my breakfast ramen with sauteed chard or kale, and a sprinkle of scallion at the end. And my favorite part is dropping the egg right into the sauteed noodles like a nest and letting it fry up!

How to Make Breakfast Ramen

Ingredients

  • 1 pack dry ramen
  • 2 sausages
  • 2 scallions, sliced thin on the bias
  • 1 egg
  • Sesame seeds
  • 1/2 cup sauteed greens, optional
  • Chili oil or sriracha, optional

Directions

Step 1: Cook the noodles

Bring a medium pot of well-salted water to a boil. Add dry ramen noodles, reduce heat, and simmer for 3 minutes or until cooked through. Strain, add the dry packet of seasoning to the noodles (if using), and stir well. Drizzle with olive oil to keep from sticking.

Step 2: Saute together

Score sausages on one side.

In a large saute pan, heat some oil and add ramen noodles and sauteed greens, if using. Mix well, then add sausages, scored side down. Allow to cook until browned, then turn and move to the sides of the pan. Stir noodles again, then make a well in the middle of the pan. Add a drizzle of oil, and gently drop in the egg. Salt the egg, cover the pan, and cook until the whites of the egg are cooked through.

Test the sausages to make sure they’re fully cooked before removing from the heat.

Step 3: Plate ramen

Gently transfer the food into a shallow bowl. Top with scallions and sesame seeds and a drizzle of chili oil.

Here’s What I Thought

If you’re a breakfast bowl kind of person, then this type of meal will be both familiar and delicious to you. It’s one of my favorite ways to eat because you get to customize it to your liking and then it’s all right there in one bowl.

I used just half the powdered seasoning packet, and I won’t use any more than that next time because it’s such a strong flavor. You could add all sorts of vegetables, or swap out the sausages for pulled pork or your favorite bacon.

All in all, I think it’s a great breakfast. It’s easy to make and perfect for using up whatever vegetables you’ve got waiting in the wings of your fridge.
