Ingredients
- 1 jar (24 ounces) salsa
- 6 large eggs
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 6 whole pita breads
- 1 medium ripe avocado, peeled and sliced
- Optional: Cotija cheese, sliced radishes and fresh cilantro leaves
Directions
- Spread salsa into a large cast-iron or other heavy skillet; place on grill rack. Grill, covered, over medium heat until bubbly, 13-15 minutes, stirring occasionally.
- With back of spoon, make 6 wells in salsa; break an egg into each well. Sprinkle with salt and pepper. Grill, covered, until egg whites are completely set and yolks begin to thicken but are not hard, 6-8 minutes. Serve with pita bread, avocado and toppings of your choice.
