My mom makes this quite often so she’s got me wanting to try it. If she doesn’t have spinach she uses fresh kale out of her garden. She let me try some and it was amazing. Now I’m making it today.
I needed way more salt than listed. I must be missing something, but this tasted so bland and sad I feel bad wasting so many chicken quarters with this recipe. Will not be making again, sorry!
Great recipe for a busy night! So simple to put together and the results are yummy. I used chicken drumsticks, since that's what I had on hand. I used smoked paprika and substituted dried parsley for the thyme. Baked a bit longer than an hour. Next time I might add some seasoned salt, too. One pan prep! Love that!
My new go-to for a quick, delicious and healthy meal for the family! Kids love it! The juices from the chicken marinate the veggies and create the most delicious flavor. I've tried many different vegetables and they all turn out great, Carrots need longer roasting time, but that's it. Excellent and easy meal!
I made this for dinner because my store had leg quarters on sale and I had fresh spinach from my garden. I thought it was a very tasty ,easy ,economical meal. I think you could vary the vegetables depending on what you had on hand. The juice cooking out of the chicken made the potatoes and spinach very flavorful!

I made adjustments I use garlic salt instead of minced garlic and sprinkledad on potatoes and chicken I also covered the dish with foil so chicken stayed moist. Instead of olive oil I used coconut oil. Dish was amazing all 6 kids liked it.
Overall, this was Ok to good. Knowing our family expects more intense flavors, I added rosemary (always good with potatoes and chicken) and even a bit of Cajun seasoning. I increased the spinach for more nutrition. Even so, it was a tad bland. Like a few other reviewers, I also had to cook the casserole for an additional 20 minutes to finish cooking the potatoes. I used both white and dark meat chicken to please different members of the household and with the extra time added, the white meat came out dry. If I make this again, I will precook the potatoes for a few minutes in the microwave before mixing with the other veggies. Yes, there was quite a bit of liquid at the bottom of the dish but I had removed chicken skin, so it was just cooking juices. I just used a slotted spoon to dish out the veggies--that was no biggie. Not sure if I'll make again or not!
Followed the instructions and it was nothing great.. Something is missing inthis recipe.. Very colourful but disappointing as far as flavor.. Will not be making again??
I was surprised how flavorful the chicken was with such simple seasoning. Found that 60 minutes wasn't quite long enough to cook the chicken quarters all the way through. The leftovers reheated well. It looks pretty in the casserole, too! Definitely making again, but adding more spinach.
