Harvest Sweet Potato Pie

Years ago, we baked pies a few days before holiday gatherings and placed them in a tall pie safe on our back porch. My father called this sweet potato pie recipe "royal pie," because he thought it was fit for a king. It's a treasured hand-me-down family recipe. —Fae Fisher, Callao, Virginia

Ingredients

  • 4 large eggs
  • 1 can (12 ounces) evaporated milk
  • 1-1/4 cups sugar
  • 3/4 cup butter, melted
  • 2 teaspoons ground cinnamon
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 4 cups mashed cooked sweet potatoes
  • Pastry for two single-crust pies (9 inches)
  • Whipped cream, optional

Directions

  • In a bowl, combine first 10 ingredients; mix well. Beat in sweet potatoes. Pour into crusts. Bake at 425° for 15 minutes. Reduce heat to 350°; bake 30-35 minutes longer or until a knife inserted in the center comes out clean. Cool completely. Serve with whipped cream if desired. Store in the refrigerator.

    Not my favorite pie. It wasn’t sweet enough for my taste. My husband is a big sweet potato person and he was not a fan.

    First time I ever made a sweet potato pie, everyone raved about it!!! Only difference was I didn't have lemon extract so I used a tiny bit of fresh squeezed lemon juice. Totally making this again

    Going to try this recipe for the holidays, but wondering if can use canned sweet potatoes instead of cooking fresh ones. Recipe just says 4 cups of mashed cooked sweet potatoes. Thank you. Will rate as soon as make.

    As someone who grew up eating sweet potato pie I want to say that your recipe looks great! I didn't eat my first bite of pumpkin pie until I was in Junior High and having it for our Thanksgiving meal dessert. I still don't know why anyone would prefer it over sweet potato!!! :) I have my own family recipe for sweet potato pie but I will make yours one day and when I do, I promise not to change your recipe and then leave you comments.     The pie is absolutely fabulous. My mother has never tried sweet potatoes pie before, and - have always mentioned how she would enjoy it. Especially because she likes pumpkin pie so much.. She wasn't just pleasantly surprised.. She is hooked !

    Fabulous pie, we made it tonight and loved it. I forgot the lemon and it was still good. Next time I may add a little more cinnamon to it. This is the first sweet potato pie we enjoyed, we took some left overs to my dad and he loved it as well.

    Loved this pie. I used fat free evaporated milk. Cut the sugar to 1 cup--but used 1/2 cup of dark brown sugar & 1/2 cup granulated. Has a good texture. Next time I am going to add more cinnamon & pumpkin pie spice. I enjoy a spicey taste.
