Pork chops are great for grilling! If you have time, marinate them for several hours or overnight before grilling for even more flavor. You could also add lemon juice and zest to the marinade to add a bright citrus note to the pork. —Gilda Lester, Millsboro, Delaware

Ingredients

  • 1/2 cup lemon juice, divided
  • 1/2 cup extra virgin olive oil, divided
  • 2 garlic cloves, minced
  • 1-1/2 teaspoons salt, divided
  • 1 teaspoon ground cumin
  • 4 bone-in pork loin chops (1 inch thick and 8 ounces each)
  • 1 medium sweet red pepper, halved
  • 1/2 large onion, cut into 1/2-inch slices
  • 1/2 medium fennel bulb, cut into 1/2-inch slices
  • 1/4 cup coarsely chopped pitted green olives
  • 2 tablespoons chopped fresh basil
  • 1/8 teaspoon crushed red pepper flakes

Directions

  1. In a shallow dish, combine 1/4 cup lemon juice, 1/4 cup oil, garlic, 1 teaspoon salt and cumin. Add pork; turn to coat. Let stand while preparing vegetables.
  2. Place red peppers, onion and fennel into grill basket; brush with 2 tablespoons oil. Grill, covered, over medium-high heat until lightly charred, 4-5 minutes. Remove to a cutting board and finely chop. In a large bowl, combine vegetables, olives, basil, remaining 1/4 cup lemon juice, remaining 2 tablespoons oil, remaining 1/2 teaspoon salt and red pepper flakes.
  3. Drain and discard marinade from pork. Grill pork, covered, over medium-high heat until a thermometer reads 145°, 6-8 minutes on each side. Let stand 5 minutes before serving with relish.
