Buttered Noodles

A few pantry ingredients jazz up butter noodles in this quick side they'll ask for again and again. &dmdash;Heather Nalley, Easley, South Carolina

  • 2-1/4 cups uncooked egg noodles
  • 1/4 cup shredded part-skim mozzarella cheese
  • 2 tablespoons butter, melted
  • 2 tablespoons grated Parmesan cheese
  • 2 teaspoons minced fresh parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon pepper


  • Cook noodles according to package directions; drain. Transfer to a serving bowl. Immediately add the remaining ingredients and toss to coat.

3/4 cup: 162 calories, 8g fat (5g saturated fat), 39mg cholesterol, 264mg sodium, 16g carbohydrate (1g sugars, 1g fiber), 6g protein.

    I've been looking for a recipe like this for a while. We both dug in for seconds. I might tone back the garlic a little if I made it again but otherwise, it's a quick and easy side dish for any meal.

    Our family loves this recipe! It's not often that everyone is happy at the dinner table, and this one makes everyone happy! I did make some changes after making it the first time as the recipe showed: used 2/3 t dried parsley instead of fresh; used 2.5 c uncooked pasta instead of 2.25 c (and I use whatever type of pasta - usually bowtie); I had to reduce the garlic powder from 1/4 t to 1/8 t. I know it's not a lot but it made a HUGE difference - way too strong for us with 1/4 t. We pair this pasta with a frozen pizza for Pizza/Pasta night! :)

    The first time I made these, I made them incorrectly and it was absolutely horrible. I gave them a second try this evening and oh my goodness! They are so simple but very delicious! Even my toddler (who has feeding issues) ate them! I can't say enough about this recipe. The only change I made this go around was I used an Italian blend shredded cheese instead of mozzarella and I used dry parsley (therefore I only did about 2/3 tsp).

    we thougth it was good, but not great. My youngest son (2) loved it, but my oldest (7), didn't care for it. My husband liked it, but not enough to make again.

    My husband had an upset stomach and requested buttered noodles. These really hit the spot. They had really good flavor with the parsley and garlic. This is a perfect side dish for any dinner.
