Bacon-Wrapped Potatoes

I received this recipe for bacon-wrapped potatoes years ago from a friend. It's a delicious new twist to a baked potato. I recently served these potatoes to visiting relatives from Norway, and they were a big hit. I love to cook and even wrote my own cookbook several years ago. —LaVerna Mjones, Moorhead, Minnesota

  • 1 small onion, thinly sliced
  • 2 medium baking potatoes, halved lengthwise
  • 4 bacon strips


  • Layer onion slices on cut side of two potato halves; top with other potato half. Wrap each potato with two bacon strips. Secure with toothpicks. Place on a lightly greased baking pan. Bake, uncovered, at 325° for 1 hour and 20 minutes or until potato is tender and bacon is crispy. Discard toothpicks.

    So simple but so delicious. A great easy new spin on baked potatoes. Add butter and sour cream toppings for a loaded potato!

    after reading the reviews, I cooked mine on the grill along with some steak - everyone raved over them/ wapped them for the first hour and unwrapped them for about 45 tasty...

    YUMM! Great twist on baked potatoes!!! Someone mentioned grilling them which I will be trying for sure once bbq season rolls around again!!

    tastes good very simple to make bake times need to be tweaked 1 hour 2o mi utes not enough if left uncovered or lg potatoes used suggest 350 degrees for 1 1/2 hours covered leave cover off last 15 minutes for bacon to crisp up

    I make these potatoes but I cook them on 250 degrees for about 3 hours and they come out so creamy and the bacon is crispy and perfect. Everybody comments on these potatoes and asks for the recipe!
