Lemon-Pepper Tilapia with Mushrooms

My husband and I are trying to add more fish and healthy entrees to our diet and this one makes it easy. It comes together in less than 30 minutes, so it's perfect for hectic weeknights. —Donna McDonald, Lake Elsinore, California

  • 2 tablespoons butter
  • 1/2 pound sliced fresh mushrooms
  • 3/4 teaspoon lemon-pepper seasoning, divided
  • 3 garlic cloves, minced
  • 4 tilapia fillets (6 ounces each)
  • 1/4 teaspoon paprika
  • 1/8 teaspoon cayenne pepper
  • 1 medium tomato, chopped
  • 3 green onions, thinly sliced


  • In a 12-in. skillet, heat butter over medium heat. Add mushrooms and 1/4 teaspoon lemon pepper; cook and stir 3-5 minutes or until tender. Add garlic; cook 30 seconds longer.
  • Place fillets over mushrooms; sprinkle with paprika, cayenne and remaining lemon pepper. Cook, covered, 5-7 minutes or until fish just begins to flake easily with a fork. Top with tomato and green onions.

    I made this recipe with some variations to the original recipe however it was still delicious! I did not have lemon pepper seasoning, so I improvised by zesting and juicing one lemon. I sautéed the mushrooms with all of the lemon zest for step one and I added half of the lemon juice to the pan while sautéing (I saved the other half of the lemon juice to pour on the filets before I baked them). I did not have a whole tomato so I added one can of diced tomatoes to the mushroom sauté pan after I added my garlic. I added a tablespoon of capers and I opted to bake my tilapia filets in the mushroom lemon-caper tomato sauce at 400 degrees for 15-20 minutes or until the fish was flakey. Delicious!

    Easy, healthy & turned out perfectly! I added a thin slice of lemon on top of each filet after seasoning. Wonderful served with rice or risotto and a veggie.

    Very easy and delicious! One thing that I added because I didn't have one of the spices was Old Bay seasoning. Taste awesome!!!

    This was delicious!! One of our better tilapia recipes. I used fresh fish as well which might have made a difference.

    This is a lovely, colorful and healthy dish that makes nice use of fresh veggies. The only thing it really needs is salt to boost the flavor.
