Zucchini Crusted Pizza Recipe

Ingredients

  • olive oil and flour for the pan
  • 2 cups (packed) grated zucchini (yellow and/or green are fine)
  • 2 eggs
  • 1/4 cup flour or any other flour
  • 1/2 cup grated mozzarella cheese
  • pinches of your favorite herbs (basil, marjoram, thyme, rosemary)
  • 1/2 cup grated parmesan cheese
  • 2 T. olive oil
  • Topping suggestions;
  • *sliced tomatoes
  • *extra cheese
  • *sliced garlic
  • *sauteed mushrooms
  • *pepperoni
  • *thinly sliced meat of your choice (pastrami, roast beef, hamburg,etc.)
  • *sauerkraut
  • *carmelized onions
  • *roasted red peppers
  • *use other cheeses to mix things up (swiss, pastrami, sauerkraut can make a nice Reuben pizza! With thousand island dressing drizzled on top before serving!)
  • *pineapple, ham, with teriyaki sauce drizzled on top
  • *anchovies
  • *your kitchen sink (:)

Directions

Oil a 10 inch pie pan and coat lightly with flour. Preheat oven to 400 degrees.
Combine zucchini, eggs, flour, cheeses, herbs and 1 T. olive oil in a bowl and mix well.
Spread into prepared pan and bake for 35-40 minutes or until golden brown. Halfway through the baking, brush with the remaining olive oil. remove from oven. When cooled, use a spatula to loosen the crust from the pan so it won't break later!
Top with your favorite items and bake at 400 degrees until heated through. Yield: serves 4
