Growing up my mom used to serve this as a side dish almost every week during the summer to use the abundant crop of summer squash her garden produced. It is an effortless sidedish. It was a childhhood favorite and still a favorite today.
- 2 cups onions sliced into rings - Any onion type will work
- 2 cups Sliced Yellow Squash
- 3 tbsp. butter
- 1 tsp. sugar
- 1/2 tsp. minced garlic
- Salt & pepper to taste
- Place butter in a large skillet. Add remaining ingredients. Sautee until vegetables are crisp tender. Serve and enjoy! Yield: serves 4
