Caesar Chicken with Feta

My tomatoey chicken is the perfect answer on those crazy days when supper has to be on the table in 30 minutes, tops (doesn't hurt that it's delicious, too). —Denise Chelpka, Phoenix, Arizona

Ingredients

  • 4 boneless skinless chicken breast halves (4 ounces each)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 teaspoons olive oil
  • 1 medium tomato, chopped
  • 1/4 cup creamy Caesar salad dressing
  • 1/2 cup crumbled feta cheese

Directions

  • Sprinkle chicken with salt and pepper. In a large skillet, heat oil over medium-high heat. Brown chicken on one side. Turn chicken; add tomato and salad dressing to skillet. Cook, covered, until a thermometer inserted in chicken reads 165°, 6-8 minutes. Sprinkle with cheese.

    Surprisingly delicious! Added black olives, used canned diced tomatoes (drained). Served with saffron orzo. Should have remembered to offer sauteed spinach.

    This recipe really WAS simple & delicious. My chicken breasts were extremely thick so i browned them on each side in the skillet & then finished it all in the oven. I also added a can of sliced black olives & instead of fresh tomatoes I used a can of drained diced tomatoes. It turned out very tender.

    This is a delicious, easy and fast recipe. I've made it twice using chicken tenderloin strips instead of whole breasts. The first time I made the recipe as written, the second time I used blue cheese dressing and omitted the feta. Both were excellent, and simple enough the recipe stays in your head without having to refer back to it!

    I didn't have fresh tomatoes so I added a can of diced. I also added olives and fresh spinach and served over rice. I also cut the chicken into smaller pieces.. the basic premise of the recipe is there. It was very tasy and fast

    This is a great easy recipe. I do follow the original directions listed in the comments. No need for oil, salt and pepper.

    We don't like tomatoes so I left those out, maybe next time I'll add mushrooms maybe.. I thought it was ok, but my kids really loved it! And that alone makes this a keeper. I'll make this again
