Chilaquiles is a traditional Mexican breakfast with fried, crispy corn tortilla chips. They’re then quickly tossed in a smokey, red chile sauce made with dried guajillo chiles, arbol and pasilla chiles, tomatoes, onion, garlic and a few spices.
