This is an easy dish to prepare, yet elegant enough for company. I'm always asked for the recipe. I adapted it from one of my mother's recipes. And now, this is one of the few ways I can get our daughters to enjoy asparagus!
"MANICOTTI was served as a first course for Easter dinner, and it's so good that we had to remember to save our appetites for the rest of the meal. Instead of using pasta, Mother made crepes, which we helped her fill with smooth ricotta cheese. It was a special holiday treat."
"I COPIED this recipe exactly the way Grandma has written it in her worn cookbook. The only difference today is that I can't get home-smoked ham like those Grandpa used to cure in his old-fashioned smokehouse. But that never matters to hungry folks at the table—Grandma's recipe is a winner every time!"
This is one of the dishes Grandma served to our family during the holidays. Now, when the family gathers and I prepare this for my grandchildren, memories of those special times at Grandma's house fill my mind. I usually double this recipe, because the leftovers are fabulous when warmed in the microwave.
This tasty main dish, pairing ham and pork, is a wonderful way to use up leftover Easter ham. Covered with a savory brown sugar sauce, these ham balls are hard to resist. —Ellen Benninger, Stoneboro, Pennsylvania
I received this recipe years ago and have put it to excellent use ever since. This beef and mushroom dish is such a hit with our family it's become a tradition for birthdays and Christmas.

THIS RECIPE is my family's traditional Easter entree.
The individual cups are pretty on the plate, especially when topped with the bright cherry sauce. Since we raise pigs, we have a good pork supply.
