The Old Gringo's Chicken Fiesta Soup

People love this colorful variation of chicken noodle soup. It's great for pot lucks.

Ingredients

6 cups Chicken stock
1 11oz can whole kernal corn, drained
1 15 oz can black beans, drained
1 14.5 oz can diced tomatoes
1/2 green bell pepper diced
1/2 medium sweet onion diced
1 stalk celery, diced
1 Tbsp Chile Powder
1 Tbsp Cumin
1/4 cup Frank's Red Hot Sauce
1 medium jalepeno seeded, deveined and diced
1 1/2 lb cooked chicken breast
1 Tsp garlic, minced

Noodles
2 cups all purpose flour
1 Heaping Tbsp Masa Flour (harina de maiz)
1 Tbsp Corn Oil
2 eggs beaten
1 tsp salt
1 tsp pepper
1 tsp cumin
1 tsp chili powder
1/4 cup warm water

Directions

In a large pot, sautee onion, celery, jalepeno and green pepper. Add chicken stock, black beans, corn, tomatoes, chicken (cut into chunks), chili powder, cumin, hot sauce. Simmer 45 minutes.

Noodles:
Combine flour, masa, corn oil, salt, pepper and spices in a large mixing bowl. Add eggs. On low speed, mix until all ingredients are combined. Add warm water, Tablespoon at a ..time until mixture resembles a bread dough. Knead with a dough hook 2 - 3 minutes and allow to rest 5 minutes.
Roll-out dough on a floured surface until about 1/8 inch thick. Cut noodles into triangles and add to soup. Simmer 15 minutes.
