Mom's Lemon Sugar Cookie

Ingredients
1 c. soft butter
2 c. gran. sugar
2 egg yolks, reserve whites
1 tsp. lemon extract
1 tsp. lemon zest
1 tsp. salt
1 c. buttermilk
1 tsp. baking soda
4 c. flour
Directions
Cream butter and sugar well. Add egg yolks, lemon extract, lemon zest and salt; beat well. Combine buttermilk and baking soda. Dissolve soda in milk. Alternate 4 c. flour and the milk mixture to the first mixture. Beat 2 egg whites until stiff. Fold in last. Bake @375° oven for 8 to 10 minutes or until golden brown.
