Hearty Stuffed Meat Loaf and Garlic Mashed Potaoes and Gravy

It is my daughter's favorite dish. She thinks no one can make a meatloaf like her mama which is really the ultimate compliment.

Ingredients

A lb. and 1/2lbs. of hamburger meat
1 cup of self rising flour
2 eggs
2 Tablespoons of sea salt
1Tablespoon of black pepper
1 Tablespoon of garlic salt
2 Tablespoons of creole Cajun seasoning
1 cup of ketchup
1/4 c of soy sauce
1 medium onion chopped
1 bell pepper chopped
1 cup of shredded cabbage
1/4 cup of carrots
Ingredients for mashed potatoes
8 Irish or red potatoes washed and cut in quarters(or sliced for faster cooking)
2 Tablespoons of butter
1 Tablespoon sea salt
1/2 Tablespoons black pepper
1/2 cup of mayo (ok to use low fat)
1/2 cups of sour cream(ok to use low fat)
1 Tablespoons of minced or chopped garlic
Ingredients for gravy
3 1/2 Tablespoons of self rising flour
dripping off of meatloaf placed in skillet
1/2 Tablespoon of sea salt
1/2 Tablespoons of pepper
Salad Plate
Several large leafs of lettuce
2-3 medium sized tomatoes cut into slices(washed and dryed)
1 medium to large cucumber sliced and 10-15 olives
Yellow Cling Peaches, Merlot

Directions

Combine first 9 ingredients in large bowl and pat into a loaf all but about a large cup of meat mixture. Make a little trench in center and place cabbage and carrots in there and cover with saved hamburger meat mixture. Be sure it is completely covered. If meat is to wet add a little more flour. If to dry add a splash of milk. Sprinkle top with a little more soy sauce.
Bake in oven at 350 degrees for one hour. Check periodically to make sure it is not getting done too fast on top as oven temps may vary. If getting too done on top reduce oven temp to 325 degrees. While potatoes and meatloaf are cooking place Lettuce leaves onto plate then place tomatoes and cucumber slices on nice serving plate and scatter your olives onto it. After salad is made spoon one yellow cling peach into wine glass smooth side up, add wine to glass leaving some of the peach sticking up. Place a Tablespoon of cool whip on top of peach (optional)and refrigerate until ready to serve. After potatoes are done(test with fork) drain and pour back in pot (away from heat) Add butter,salt,pepper,mayo,sour cream and garlic. Mix with electric mixer until creamy and smooth. Place your favorite bread in oven and heat. Take dripping from meatloaf and place in 10 inch skillet. Turn on high to get mixture hot. Test the heat of drippings by dropping a little flour into it. If it bubbles it is hot. Then place 3 1/2 Tablespoons of flour in along with salt and pepper. With fork keep stirring flour until desired brownness. Then add water. Stirring vigorously to bring up cooked flour from bottom of pan. When adding water leave about 2-3 inches from top of pan. Reduce heat to medium high and stir constantly, Mixture will bubble and become thicker. When gravy is to your desired consistency remove from heat and serve.
