Christmas Spice Yams with Apple

We lived in Central Europe where hot spice wine was a traditional part of the Christmas season. When looking for a yam recipe to serve at holiday dinner, I decided to mix the two traditions - American candied yams with German Christmas(Gluwein) spices. The combination was a hit.

Ingredients

2 cans candied yams, cut in 2" pieces
1 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 cup brown sugar
1/4 cup maple syrup
1/2 cup raisins
1 large apple, peeled and diced
1 teaspoon lemon juice
1/3 cup pecans, chopped, toasted

Directions

Put yams and syrup in large saucepan with spices, sugar, and maple syrup. Heat until sugar melt, stirring occasionally. Stir in raisins.

Toss diced apples with lemon juice. Mix well and add to yams.

Simmer for 5 - 10 minutes, or until apples or tender and liquid is like syrup.

Serve with pecans sprinkled over top.
