Applesauce Breakfast Cake

This is a favorite of the kids I nanny for. They always ask me to help them make it as a treat for their parents!

Ingredients

Applesauce:
3 medium apples, peeled, cored, and sliced
1 cup water
3 Tbsp. honey
1/2 tsp. cinnamon

Batter:
1 cup flour
1/3 cup sugar
1/2 tsp. baking powder
1/4 tsp. baking soda
1 /8 tsp. salt
1 egg
prepared applesauce (above)
1 tsp. vanilla

Topping:
1/2 cup brown sugar
2 Tbsp butter/margarine
1 1/2 tsp cinnamon
1/2 cup chopped pecans

Directions

Simmer apples and water on stove-top for 15-25 minutes. Mash with a potato masher. Stir in honey and cinnamon.
Mix topping ingredients in a small bowl until crumbly.
Mix dry batter ingredients. In a separate bowl, mix wet ingredients. Combine.
Pour 1/2 of batter into a greased 8x8 pan. Sprinkle with 1/2 of the crumble topping. Pour on remaining batter and top with remaining crumble.
Bake 20-25 minutes at 350*. Cool 10 minutes before cutting and serving.
