Ingredients

1 Cup King Arthur Flour (all-purpose)
2 teaspoons Sugar
1/2 teaspoon Salt
1/2 teaspoon Baking Powder
1/4 teaspoon Baking Soda
1 Cup Buttermilk
1 Egg, large ****
2 Tablespoon Melted Butter, unsalted
1 teaspoon Vanilla Extract

Directions

Preheat nonstick skillet or griddle to 350 degrees (un-buttered or sprayed).

Combine flour, sugar (or mix sugar and egg yolk, see note), salt, baking powder, and baking soda in a medium mixing bowl.
Microwave buttermilk for 20 second, (or room temperature). Whisk in egg, butter and vanilla.
Add wet mixture to dry mixture and stir until smooth.
Pour about 1/3 C of batter onto preheated skillet or griddle. When bubbles begin to form on the pancakes, flip and cook other side.

For a special topping….1 Tablespoon Amaretto Topping ~ Combine ¼ teaspoon Almond Extract, ½ cup Maple Syrup and microwave for 45 seconds. Serve hot. Garnish pancakes with sliced ¼-cup almonds. Makes 8 four-inch pancakes ~ just know my Mother and grandson thinks these CAN’T be made with out them sitting at the table! *smiles*

**** To make pancakes fluffy I like to separate the yoke and egg whites…Wisk the egg whites until fluffy (don’t worry about making them peak) fold egg yolk and sugar, gently, and proceed with recipe…you’ll love the difference ~ (this adds air to the batter)!
