Peach Cobbler Cookies

I developed this recipe when my sister asked me to bring homemade cookies (other than peanut butter and chocolate chip) to a luncheon she was hosting.

Ingredients

1 stick butter (at room temperature or 25 seconds in microwave)
1/2 cup brown sugar
1/2 cup sugar
1 egg, beaten
2 - 15oz cans sliced peaches, (cut each slice into 3 to 4 pieces)
1 teaspoon vanilla extract
1/4 teaspoon rum extract
2 cups flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon cinnamon
1/4 cup finely chopped pecans

Directions

Cream butter and both sugars by hand until there are no lumps and a smooth paste is formed. Stir in beaten egg, sliced peaches and extracts. Mix dry ingredients together and add to mixture. Stir in nut.

Drop by rounded tablespoon onto greased cookie sheet. Bake for 15 to 17 minutes at 350 degrees. Makes 30 cookies. Cool and store in refrigerator.
