Homemade Granola with Chocolate and Cranberries

This granola is good for you and good tasting, a win win. You can serve it in mini muffin cups as I like to do for an easy appetizer that you can pull out of the freezer at the last minute for unexpected guest. You can add different colored chocolate candies appropriate for you party or gathering. Either as a snack, or on top of your yogurt or oatmeal in the morning, this will be an easy item to make and have on hand. If you omit the chocolate you could have your own breakfast cereal with out the guilt.

Ingredients

1 cup 100% whole grain quick oats, dry
2 packs Better Oats Raw Pure & Simple Multigrain Hot Cereal Bare Raw, dry
1 tbs canola oil
1 tbs caramel sugar free syrup, I used Cafe Al Fresco coffee syrup
1/8 cup honey
1/2 tbs ground cinnamon
pinch of sea salt
1/4 cup of sugar free pancake syrup maple flavored
1/4 cup dry roasted sunflower seeds
1/4 cup flaxseed
2 packs (3.5 grams each) Truvia
1 cup unsweetened dried cranberries
1/2 cup M&Ms chocolate coated candies, any color you prefer

Directions

In a large mixing bowl mix your oats, oil, syrups, honey, cinnamon, salt, sunflower seeds, flaxseed, and truvia. Spread out on a cookie sheet covered with parchment paper and bake in a preheated 300 degree oven for 40 minutes.
Stir every 10 minutes during baking to make sure you break up granola and it bakes evenly. Add dried cranberries after it has cooled along with chocolate candies. I store mine in freezer in a zip-lock freezer bag and enjoy it cold.
