Deep Fried Mahi Mahi Fingers w/ Coconut Cilantro Lime Sauce

Ingredients
Coconut Cilantro Lime Sauce:
1cup sour cream
1 cup mayonnaise
½ cup coconut milk
¼ cup lime juice
4 tablespoon chopped fresh cilantro
2 tablespoon apple cider vinegar
4 large garlic cloves, minced
Deep Fried Mahi Mahi Fingers:
3 pounds fresh Mahi Mahi fillets cut into 2" by 3" pieces
3 large eggs, beaten
1½ cup all purpose flour
¾ cup rice flour
2 tablespoon Seafood seasoning
2 teaspoons salt
1 teaspoon pepper
Vegetable oil
Directions
Coconut Cilantro Lime Sauce:
Combine all ingredients, and stir well with a whisk. Cover sauce, and chill.
Deep Fried Mahi Mahi Fingers:
In a bowl, beat the egg. In a large bowl add all purpose flour, rice flour, seafood seasoning, salt and pepper. Mix the ingredients well. Preheat fryer adding the oil and following directions. Place Mahi Mahi into egg mixture and make sure pieces is all coated with egg mixture. Place the Mahi Mahi into the flour mixture, making sure Mahi Mahi is coated. Fry in batches in the hot oil or at about 370° until golden brown. Drain on rack and season with salt and pepper if desired. Serve with a dipping cup of Coconut Cilantro Lime sauce.
