This is a super tasty and easy way to use up leftover turkey. This dish is very forgiving. If you don't have as much turkey as I did leftover that's fine, just use what you have. I used frozen veggies and a packet of gravy mix, but you have similar leftovers you could use them too.

Ingredients

4 cups cooked Turkey chopped, I used breast meat
16 ounces dry Extra Wide Egg Noodles
1 cup fat free sour cream, or regular if you prefer
2.75 ounces dry Southeastern Mills Country Gravy Mix Packet
12 ounces Birds Eye Steamfresh Frozen Mixed Vegetables
1/2 cup Italian four Cheese Blend Shredded Cheese
Pinch Black Ground Pepper or more to taste
Parsley, garnish optional

Directions

Cook egg noodles according to package directions, it should take 8-9 minutes on stove top. Cook vegetables according to package directions in microwave, it should take about 5 minutes.
Prepare gravy packet by mixing it with 3/4 cup of cold water until well combined. When pasta is done reserve one cup of pasta water to finish your gravy. Put pasta in your colander while you add your cold gravy to the hot cup of pasta water, heat on stove top on high just until it boils, then add your sour cream, and shredded cheese, black pepper, noodles, turkey, and veggies, toss until all are nice and coated with creamy sauce and hot. Garnish with parsley fresh or dry and more shredded cheese, optional. Salt to taste.
