Ingredients:

– 3 large potatoes – 2 eggs – 1 Tbsp. grated onion – 2 Tbsp. all-purpose flour – 1 tsp. salt – 1/2 tsp. baking powder – Vegetable oil for frying

Prep the potatoes

Start by washing and peeling the potatoes. Then, you can either grate the potatoes or shred them with a food processor.

Prep the potatoes

Once shredded, rinse them in cold water and drain well, squeezing to remove excess water.

TIP: Use tea towels to remove excess water.

Make your potato mix

In a large bowl, mix the beaten egg, flour, onion, salt and pepper to evenly coat your potatoes.

TIP: Grate the onions to better incorporate them into the mix.

Fry up  the latkes

Heat a quarter-inch of oil in a pan. Drop in a third cup of the mix and flatten with a spatula.
