Slow-Cooked Potatoes with Spring Onions

I love the simplicity of this recipe, as well as its ease of preparation with my slow cooker. Everyone always enjoys roasted potatoes, even my pickiest child! If desired, top with shredded or crumbled cheese. —Theresa Gomez, Stuart, Florida

Ingredients

  • 4 pounds small red potatoes
  • 8 green onions, chopped (about 1 cup)
  • 1 cup chopped sweet onion
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Directions

  • 1. In a 5- or 6-qt. slow cooker, combine all ingredients. Cook, covered, on low until potatoes are tender, 6-8 hours.
