Garlic Mashed Potatoes
- 6 medium potatoes, peeled and quartered
- 4 to 5 garlic cloves
- 5 cups water
- 1/2 to 1 teaspoon salt
- Pinch pepper
- 2 tablespoons olive oil
- 1. Place potatoes and garlic in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender.
- 2. Drain, reserving 2/3 cup cooking liquid. Mash potato mixture. Add the oil, salt, pepper and reserved liquid; stir until smooth.
3/4 cup: 167 calories, 5g fat (1g saturated fat), 0 cholesterol, 201mg sodium, 30g carbohydrate (2g sugars, 2g fiber), 3g protein.

Fellowship members scarfed this. After prep I heated them in a sprayed crockpot.Instead of the olive oil, put in a stick of salted butter. Tastes MUCH BETTER. Perhaps add Himalayan salt instead of sea salt.
