Orange Juice Cake

This orange juice cake recipe is a perfect showcase for our Florida oranges, with juice in the cake and marmalade in the frosting. Everyone comments on how moist the cake is. —Terry Bray, Auburndale, Florida

Ingredients

  • 1 package yellow cake mix (regular size)
  • 1 cup orange juice
  • 3 large eggs, room temperature
  • 1/3 cup water
  • 1/3 cup canola oil
  • FROSTING:
  • 1 package (8 ounces) cream cheese, softened
  • 1/4 cup butter, softened
  • 1 tablespoon orange marmalade
  • 3 cups confectioners' sugar

Directions

  • 1. Preheat oven to 350°. In a large bowl, combine cake mix, orange juice, eggs, water and oil; beat on low speed for 30 seconds. Beat on medium for 2 minutes.
  • 2. Pour into a greased 9x9-in. baking pan. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool on a wire rack.
  • 3. For frosting, in a small bowl, beat cream cheese and butter until smooth. Beat in orange marmalade and confectioners' sugar. Spread over cake. If desired, swirl with additional orange marmalade. Store in the refrigerator.
